CINCO DE MAYO ON LONG ISLAND - NY

After I smoke the chicken, this is how I am going to make the corn today.  It looks real good with the dry cheese.  I will be in bed nearly all day, but that is the nice thing about smoking meat.  My roommate will get the mesquite going.  I will spend 5 minutes prepping the chicken after splitting it, and he will attend to the fire.

Assuming I had the capacity of getting out of the house today, I would love to be in Market Square or Washington Park celebrating Cinco de Mayo.  Not because we are a border area, or because it is a Mexican holiday, but because it celebrates our diversity.

I can assure you thousands upon thousands of Anglos on Long Island last night and today celebrated and will celebrate Cinco de Mayo because celebrating diversity is just how things are. 

It is sad we do not have a big Cinco de Mayo festival.  Hopefully with Rose Gowen now better able to focus on these type things, we will have more options.

GOD DOES THAT CORN LOOK GOOD
