NO EXCUSE FOR NOT BEING ABLE TO MAKE A QUICK EASY HEALTLY MEAL
 
My roommate and I are both tired.  This was no more than 10 minutes prep time.  I trimmed two chicken breasts of any fat and then made them into the chunks you see. I put a little olive oil in the pan for stir frying. I added Tones Rosemary Garlic seasoning.  After I lightly cooked the chicken I added the asparagus.  I cut the thick ends off, and then cut into 3rds before mixing with the chicken. 
 
It should take 15-20 minutes on a slow simmer.  You can ad egg noodles if you like.

Tonight is pork loin pork chops done in the oven. I also made German fried potatoes. You can use any potato you like, but my roommate likes the red ones.

You slice them, quick stir fry in a little olive oil, add salt, paprika, bell pepper and onions. You can also add Tones Garlic and Rosemary. 30 minutes later on a slow simmer they are steamed through.

The pork chops are based on thickness. These were thick but not too thick so I roasted them at 350 for about 25 minutes on each side.

Cooking is easy - after I put the pork in, I prepared the potatoes and let them sit. With about 15 minutes of prep time and 50 minutes of cooking we are eating. While everything cooked I cleaned the kitchen.

We will now eat and then spend the night relaxing. I will probably read around the pool.
